Nel suggestivo contesto di un ristorante moderno con ampie vetrate sul verde dell'Olgiata e con una meravigliosa cucina a vista, chef Newyorkese David Levi, reduce dalle sue esperienze dietro le quinte di alcuni dei ristoranti più "chiaccherati" del mondo (fra cui il celebre NOMA a Copenhagen e Fäviken in Svezia), parlerà del movimento della Nuova Cucina Nordica e preparerà dei deliziosi assaggini utilizzando esclusivamente materie prime italiane, con gli antichi criteri della cucina Nordica. L'enfasi sarà sugli ingredienti: a Km 0, biologici e preferibilmente selvatici. Alcuni più vicini alle nostre tradizioni, altri più inaspettati. I cereali non vengono utilizzati e pertanto questo modo di cucinare è ideale per chi segue una dieta Paleo, low-carb o senza glutine. 



DESCRIZIONE DEL CORSO

“Wildness”: semplicità, integrità, cibo “vero”. 

La Nuova Cucina Nordica ridefinisce i valori e l’estetica del fine dining al livello globale. Gran parte della genialità dei ristoranti come Noma (di René Redzepi) a Copenhagen e Fäviken (di Magnus Nilsson) nel nord della Svezia, è dovuta proprio alla loro attenzione al passato. 

Le antiche tradizioni e profonde conoscenze delle piante e degli animali selvatici, dei funghi, delle tecniche di stagionatura e conservazione, dall’affumicatura alla conservazione in salamoia alla fermentazione; la selezione delle razze più antiche in base al sapore e alla bellezza; il saper riconoscere il momento esatto della raccolta e il modo migliore di trattare ogni materia prima con il massimo rispetto, massimizzandone il potenziale: tutto questo forma la base della Nuova Cucina Nordica. 

Nilsson parla del “rektun mat” (cibo vero). In Italia è da tempo immemorabile che si prepara il cibo vero: esistono infatti molti elementi comuni fra le due filosofie gastronomiche, entrambe in netto contrasto con quelle della “haute cuisine” francese.

In questo corso lo chef statunitense David Levi parlerà del singolare approccio degli chef Nordici e il movimento culinario “farm-to-table” (filiera corta) che si sta svolgendo in contemporanea negli Stati Uniti e come questi movimenti importanti potrebbero introdurre nuove idee in Italia, pur mantenendo integro il rispetto del principio fondamentale della gastronomia Italiana e cioè quello della preparazione del cibo vero.

Il corso, in lingua inglese, è dimostrativo e include una degustazione dei piatti con vini in abbinamento.

In the evocative setting of a modern restaurant boasting broad views of the Olgiata countryside and with a gorgeous open kitchen, New York chef David Levi, fresh from his experiences behind the scenes at some of the world's most talked-about restaurants (including NOMA in Copenhagen and Fäviken in Sweden), will talk about the popular New Nordic Cuisine movement and will prepare some delicious snacks using 100% Italian ingredients using the principles of the ancient Nordic tradition. The emphasis will be on the ingredients: local, organic and preferably wild. Some very traditional, some more surprising. There will be no use of grain, so this type of cooking is ideal for those who are following a Paleo, low-carb or gluten-free diet. 


COURSE DESCRIPTION



Wildness.  Simplicity.  Integrity.  Real food.  

The new Nordic cuisine has redefined the values and aesthetics of global fine dining.  Much of the brilliance of Rene Redzepi's restaurant Noma in Copenhagen and other cutting edge Nordic restaurants like Magnus Nilsson's Fäviken in northern Sweden lies in their attention to the past.  

Time honored knowledge of wild plants, animals, and mushrooms, of aging and curing techniques, of smoking food, pickling it, or fermenting it, of selecting heirloom breeds for flavor and beauty, of knowing just when to harvest, just how to treat each ingredient with a maximum of respect to bring forth its maximum potential, all this is at the heart of new Nordic cuisine.  

Nilsson speaks of making "rektun mat," literally "real food."  Of course, Italians have been making real food since time immemorial.  There is much that links the underlying philosophies of Italian and Nordic food, both in contrast to French "haute cuisine."  

In this class, American chef David Levi will explore the unique approach of Nordic chefs and the related "farm-to-table" movement in the United States and see how these movements might bring new ideas to Italy while honoring the core Italian culinary principle of making real food.

The course will be held in English and will include a degustation of dishes and wines.
